GYUBAN


임금님의 수라상에 올라가던 식재료는 각 지역의 가장 좋은 특산품만을 고르고 골라 사용된다고 한다. 이때 이 수라상은 단순히 가장 품질이 좋은 요리를 넘어 각 지방의 농사가 잘 이루어지고 있음을 살펴볼 수 있는 한반도의 집약체인 셈이다. 한식 파인 다이닝 레스토랑 규반은 이러한 맥을 잇고자 하는 김지영 오너 셰프의 손끝에서 구현된 궁중 요리를 선보이는 공간이다.

셰프는 과거 우리의 음식을 현대의 입맛에 맞추어 요리하는 여느 레스토랑과 달리 궁중 요리를 온전하게 선보이려 식재료 하나 하나 손수 선별하며 이를 위해 조선의 고조리서까지 치밀하게 분석하여 고증한다. 그의 요리는 맛을 구현하는 것을 넘어 과거와 현재를 넘나드는 시간을 선사하는 것이다. 이러한 셰프의 철학은 규반이라는 공간의 스토리가 되었다.

요리를 통해 과거와 현재, 미래의 시간을 넘나드는 경험과 고조리법을 요리로 구현하는 셰프의 행위는 우리로 하여금 ‘기록’이라는 키워드를 연상시켰고, 우리는 ‘기록의 공간’이라는 컨셉으로 디자인을 전개하였다. 우리는 컨셉의 스토리를 보다 섬세하게 구현하기 위해 셰프의 철학과 일맥상통하는 예술을 선보이는 6인의 작가와 조경, 그래픽 등 각 분야의 전문가와 협업하여 공간을 기획하였다.

규반의 공간은 크게 전이 공간인 라운지와 라운지와 룸을 이어주는 복도, 그리고 식사 공간인 5개의 룸으로 구성되어있다. 우리는 이러한 공간의 구성에서 과거와 현재, 미래를 각각의 레이어로 보았고 이를 켜켜이 중첩시켜 유저로 하여금 기록의 공간을 순차적으로 경험할 수 있도록 하였다.

공간에서 처음 맞이하게 되는 메인 출입구는 겹의 한지를 통해 현재에서 과거로 이동하는 기록의 공간으로 들어간다는 의미를 담고있다. 출입구를 지나 홀에 들어서면 전이공간으로 이루어진 라운지가 있다. 이 공간은 셰프가 웰컴 푸드를 제공하여 요리를 통해 과거의 시간을 느낄 수 있는 방으로 들어서기 전, 잠시 멈추어 갈 수 있는 곳이 된다.

홀을 지나 통석의 단을 올라 나오는 복도에서는 병렬로 늘어선 열주들을 통해 전통 건축의 수평적 형태를 차용하였다. 이러한 디자인의 표현을 통해 우리는 과거의 조리서를 재해석하지 않고 온전히 표현하는 셰프의 요리 철학처럼 유저로 하여금 과거의 시간의 흐름으로 들어가는 경험을 연출하고자 한다.

이 열주의 뒤에 배치된 5개의 룸은 셰프의 요리를 마주하는 공간으로 룸의 문을 여는 그 순간부터 시간성을 느낄 수 있도록 하기 위해 우리의 전통 기법인 옻칠 한지를 마감재로 선정하였다. 고서의 표면과 같이 강한 물성을 가진 이 소재를 통해 우리는 기록을 열고 들어가는 감각을 선사하고자 하였다.

5개의 룸은 가장 오래 머무르는 공간으로 지나온 공간들의 남성적인 이미지와 다르게 따뜻하고 안정적인 비례감을 통해 식사에 집중할 수 있도록 조성하였다. 룸은 앞선 공간들에서 느낀 경험들이 모두 집약된 공감각의 공간으로 이는 테이블 위에서 펼쳐지는 셰프의 요리와 닮아있다. 룸을 둘러싸는 조경과 수공간은 이러한 공감각적 경험을 더욱 극대화하는 매개체들로 룸 너머의 조경은 사라져 가는 우리나라의 자생식물로만 구성하여 기록의 의미를 더하였다. 그 사이에 관입된 수공간은 워터 서큘레이터 시스템을 구축하여 마치 비가 내리는 어느 자연의 한가운데에서 식사를 하는 경험을 제공한다.

이렇듯 우리는 김지영 오너 셰프만의 올곧은 요리 철학을 공간 전체의 스토리로 풀어내고자 하였으며, 규반을 찾는 모든 이들이 우리의 공간을 통해 과거와 현재를 넘나드는 시간의 흐름을 경험하고 그 시간의 흐름을 담은 셰프의 요리를 온전하게 즐길 수 있기를 바란다.

The royal table for the emperor only took the best of regional produce. This was not only for the better taste and quality of the ingredient, but to check up on the agriculture of the whole peninsula as well. Korean fine dining restaurant GYUBAN carries on the legacy. The owner chef Kim Ji Young presents customers with authentic Korean royal cuisine.

Some restaurants focus on adjusting Korean food to modern tastes, but in GYUBAN, the chef studies and explores every single ingredient in detail through historical research from Chosen culinary manuscript. Chef’s dishes are more of a liaison between the past and present by bringing the tastes of traditional cuisine. This philosophy became the identity of the place.

Being able to experience past, present, and future with traditional recipe led us to think of the word “record.” We proceed to further this idea and created a concept of “Place of the record.” We collaborated with 6 experts from different fields to elaborate this concept.

GYUBAN is consisted of lounge as transfer space, hallway to connect the lounge and rooms, and 5 separate dining rooms. We thought of each space as past, present, and future; and we layered these spaces for customers to experience the flow of time.

The main entrance of the place greets customers with layers of Hanji, the Korean traditional handmade paper. As customers enter the hall is the lounge used as transfer space; the chef provides welcome food and gives recess before navigating customers to travel back in history.

Stepping up the stone platform, the hallway adopted horizontal form of traditional architects by placing colonnades. This horizontal form also represents chef’s faith to fully adopt traditional recipe without arrogance and helps customers to naturally flow into different time.

Behind the colonnade, five dining rooms are the space where customers encounter with chef’s cuisine and start journey of time. Lacquered Hanji was specifically chosen as a finishing material for the door; the rough texture reminds people of the ancient manuscript. This helps customers to immerse in the experience of traveling back in time.

All dining rooms welcome customers with warm and comfortable atmosphere. They adopted more stable proportion compared to other spaces of the restaurant. In the dining room, customers encounter chef’s dishes and thus experience the tradition with different senses. The landscape and indoor water space surround the dining rooms and fully maximize this experience. The landscape consists of native Korean wild plants to add to the concept of “record,” and the water space having its own water circulator system helps create mood for dining in the forest on rainy day.

Philosophy of the owner chef Kim Ji Young was explained and portrayed by the story of the space design. GYUBAN hopes customers to experience the journey of time with exquisite Korean traditional cuisine.
